The soup can also be prepared vegetarian or vegan very well by replacing minced meat and dairy products with vegan alternatives. If you want your guests or just yourself to feel warm again, then here is the popular recipe again: What you need: 1 onion 1 clove of garlic 250 grams of leek 500 g mixed minced meat 2 tbsp sunflower oil salt 800 ml vegetable broth 200 g processed cheese (cream level) 150 g crème fraîche (30% fat) 1 pinch cayenne pepper 1 pinch grated nutmeg Peel and finely dice the onion and garlic Halve the leek, wash, drain, trim and slice In a large saucepan, sauté the ground beef, diced onion and garlic in sunflower oil for 3-4 minutes Add the leeks and salt, sauté for 1-2 minutes, fill up with vegetable stock and simmer for about 10 minutes.
