Kohlrabi leaves are not only suitable for rabbits, hamsters, and guinea pigs but also for human consumption. They are rich in chlorophyll, magnesium, vitamin C, and fiber, even healthier than the bulb. Raw, they offer a spicy taste and are suitable for smoothies, also combined with spinach, apples, avocado, and oranges. They are also excellent for other dishes, e.g., in a kohlrabi cream soup, as a side dish to a salad, or stuffed with rice, meat, and vegetables. Did you know that you can use them as a substitute for basil in pesto? Simply make pesto as usual with the leaves to experience a new taste. Do not just eat any leaves. Yellowish, dry spots are not suitable for consumption; also, prefer organic kohlrabi. It is also important to wash the leaves before preparation and remove the stems as they are thick and bitter.
